Southwestern Bean Salad



This delicious summertime salad was something that was made for our shareholder picnic.  Even though corn is done :(  canned corn works really well.  We thought you might enjoy:


1 15 oz. can red kidney beans (rinse and drain)
1 15 oz. can corn (rinse and drain)
2 scallions, chopped
1 teaspoon cumin (or more if desired)
1/2 teaspoon corriander
1/3 - 1/2 jar salsa (~1 cup)
1 tablespoon white vinegar
2 tablespoons olive oil
1 garlic clove, minced
salt and pepper to taste

Combine all ingredients in a large bowl.  Serve chilled.

A nice variation is to add cooked quinoa to this salad.
